Instructions
- Toss Blueberries: In a small bowl, toss the blueberries with 1 tablespoon of flour and set aside.
- Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Prepare Batter: In a separate large mixing bowl, cream together the butter and sugar, beat in the egg, then mix in the Greek yogurt and vanilla until smooth. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the floured blueberries.
- Bake: Grease a 6-inch round cake pan or line with parchment paper. Pour the batter into the pan and smooth the top. Place the pan in the air fryer basket. Air fry at 320°F for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
