Instructions
- Preheat and Prepare Pans: Preheat your oven to 375°F (190°C) and generously grease a financier or mini muffin pan to prevent sticking.
- Browning the Butter: In a saucepan over medium heat, melt the unsalted butter, continuing to cook until it turns golden brown and emits a nutty aroma. Remove from heat and set aside to cool slightly.
- Mix Dry Ingredients: In a mixing bowl, whisk together powdered sugar, almond flour, all-purpose flour, and salt until evenly combined.
- Add Egg Whites and Vanilla: Stir in the egg whites and vanilla extract to the dry mixture, blending until you achieve a smooth batter.
- Incorporate Browned Butter: Gradually pour the cooled browned butter into the batter, mixing thoroughly until fully incorporated.
- Fill Molds: Spoon the batter into the prepared molds, filling each about three-quarters full for proper rising.
- Add Raspberries: Gently press a few fresh raspberries into the top of each financier for a burst of fruitiness.
- Bake: Place the pan in the oven and bake for 15 to 18 minutes, or until the edges are golden brown and centers are set.
