Description

Experience the rich and authentic flavors of traditional Birria Tacos, featuring tender slow-cooked beef infused with a deeply spiced chili sauce, served on warm corn tortillas garnished with fresh cilantro and lime wedges. This comforting Mexican dish is perfect for a flavorful family meal or festive gathering.

Ingredients

Scale

Meat and Broth

  • 2 lbs beef chuck roast, cut into chunks
  • 4 cups beef broth

Chili Sauce

  • 2 dried guajillo chiles, seeds removed
  • 2 dried ancho chiles, seeds removed
  • 4 cloves garlic
  • 1 onion, quartered
  • 2 tbsp apple cider vinegar
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp ground cloves

For Serving

  • 12 small corn tortillas
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions

  1. Toast the Chiles and Simmer: In a pot over medium heat, dry roast the dried guajillo and ancho chiles until they become fragrant, about 1-2 minutes. Add the garlic cloves, quartered onion, and beef broth to the pot. Bring the mixture to a gentle simmer and cook for 20 minutes to infuse the broth and soften the ingredients.
  2. Blend the Sauce: Transfer the cooked chiles, garlic, onion, and broth into a blender. Blend until smooth to create a rich sauce. Return the sauce to the pot and season with apple cider vinegar, ground cumin, dried oregano, and ground cloves, stirring well to combine all the flavors.
  3. Slow Cook the Beef: Place the beef chuck roast chunks into a slow cooker. Pour the prepared chili sauce over the meat, ensuring it is well covered. Cook on low for 6 hours, or until the beef is tender and easily shreds with a fork.
  4. Prepare the Tortillas and Assemble: Once the beef is cooked, shred it finely. Heat the small corn tortillas on a griddle or skillet until warm and pliable. Fill each tortilla with the shredded beef.
  5. Serve and Garnish: Garnish the assembled tacos with freshly chopped cilantro and serve with lime wedges on the side. For an authentic experience, dip the tacos into the flavorful broth before eating.

Notes

  • Removing seeds from chiles reduces bitterness and prevents the sauce from becoming overly spicy.
  • Using a slow cooker allows the beef to become tender without constant attention.
  • Toast chiles carefully to avoid burning, which can impart a bitter flavor.
  • For added richness, some recipes incorporate cheese or caramelized onions when assembling the tacos, though these are optional.
