Instructions
- Toast the Chiles and Simmer: In a pot over medium heat, dry roast the dried guajillo and ancho chiles until they become fragrant, about 1-2 minutes. Add the garlic cloves, quartered onion, and beef broth to the pot. Bring the mixture to a gentle simmer and cook for 20 minutes to infuse the broth and soften the ingredients.
- Blend the Sauce: Transfer the cooked chiles, garlic, onion, and broth into a blender. Blend until smooth to create a rich sauce. Return the sauce to the pot and season with apple cider vinegar, ground cumin, dried oregano, and ground cloves, stirring well to combine all the flavors.
