Ingredients
Scale
For the Casserole:
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 8 flour tortillas, cut into quarters
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional for topping)
For Garnish (optional):
- Chopped green onions
- Chopped cilantro
- Sliced jalapeños
- Sour cream or guacamole
Instructions
- Cook the Beef Mixture: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Stir in the taco seasoning and water, then cook for an additional 5 minutes to allow the flavors to meld. Stir in the black beans and enchilada sauce, then remove from heat.
- Prepare the Baking Dish: Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray. Layer the bottom of the dish with a few pieces of the cut flour tortillas, covering the entire surface.
- Layer the Casserole: Top the tortillas with a portion of the beef and bean mixture, then sprinkle with a generous amount of shredded cheddar cheese. Repeat the layers, ensuring you end with a layer of cheese on top.
- Bake the Casserole: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted, bubbly, and the casserole is heated through.
- Serve and Garnish: Remove from the oven and let cool for a few minutes. Top with a dollop of sour cream and garnish with green onions, cilantro, jalapeños, or other desired toppings. Serve warm and enjoy your flavorful baked burrito casserole!
