Ingredients
Scale
Dough
- 1 cup mashed ripe bananas (about 2 large)
- ¾ cup warm milk (110°F)
- ¼ cup granulated sugar
- 2¼ teaspoons active dry yeast (1 packet)
- ¼ cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 3¾ to 4 cups all-purpose flour
Filling
- ½ cup brown sugar
- 1 tablespoon ground cinnamon
- ¼ cup unsalted butter (softened)
Cream Cheese Icing
- 4 oz cream cheese (softened)
- 2 tablespoons unsalted butter (softened)
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Activate Yeast: In a large mixing bowl, whisk together warm milk, sugar, and yeast. Let sit for 5–10 minutes until the mixture becomes foamy, signaling the yeast is active and ready.
- Mix Dough Ingredients: Add mashed bananas, melted butter, vanilla extract, and salt to the yeast mixture. Stir in the flour gradually until a soft dough forms, adjusting flour amount as needed for the right consistency.
- Knead the Dough: Knead the dough on a lightly floured surface for 6–8 minutes by hand or use a stand mixer with a dough hook for 5 minutes, until the dough is smooth and elastic.
- First Rise: Place the dough in a greased bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for 1 to 1½ hours until it doubles in size.
- Prepare Filling: In a small bowl, mix together the brown sugar and ground cinnamon.
- Shape Rolls: Punch down the risen dough and roll it out into a 16×12-inch rectangle. Spread the softened butter evenly over the surface, then sprinkle the cinnamon sugar mixture on top.
- Roll and Slice: Roll the dough tightly from the long side to form a log. Slice the log into 12 even rolls.
- Second Rise: Place the rolls into a greased 9×13-inch baking dish, cover, and let them rise again for 30–45 minutes until puffy.
- Bake: Preheat oven to 350°F (175°C). Bake the rolls for 22–28 minutes or until golden brown on top.
- Prepare Icing: While rolls are baking, beat the cream cheese and butter together until smooth. Gradually add powdered sugar, milk, and vanilla extract, mixing until creamy.
- Finish and Serve: Spread the cream cheese icing over the warm rolls and serve immediately for best flavor and texture.
Notes
- Use extra ripe bananas for the best flavor and natural sweetness.
- Prepare the rolls the night before by refrigerating them after the second rise, then bake fresh in the morning.
- Add chopped walnuts or pecans to the filling for extra crunch and texture.
