Description

Deliciously soft and fluffy Banana Bread Cinnamon Rolls featuring a sweet banana-infused dough rolled with cinnamon sugar, baked to golden perfection, and topped with a creamy cream cheese icing. Perfect for breakfast or dessert, these rolls combine the flavors of classic banana bread and cinnamon rolls for a delightful treat.

Ingredients

Scale

Dough

  • 1 cup mashed ripe bananas (about 2 large)
  • ¾ cup warm milk (110°F)
  • ¼ cup granulated sugar
  • 2¼ teaspoons active dry yeast (1 packet)
  • ¼ cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 3¾ to 4 cups all-purpose flour

Filling

  • ½ cup brown sugar
  • 1 tablespoon ground cinnamon
  • ¼ cup unsalted butter (softened)

Cream Cheese Icing

  • 4 oz cream cheese (softened)
  • 2 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Activate Yeast: In a large mixing bowl, whisk together warm milk, sugar, and yeast. Let sit for 5–10 minutes until the mixture becomes foamy, signaling the yeast is active and ready.
  2. Mix Dough Ingredients: Add mashed bananas, melted butter, vanilla extract, and salt to the yeast mixture. Stir in the flour gradually until a soft dough forms, adjusting flour amount as needed for the right consistency.
  3. Knead the Dough: Knead the dough on a lightly floured surface for 6–8 minutes by hand or use a stand mixer with a dough hook for 5 minutes, until the dough is smooth and elastic.
  4. First Rise: Place the dough in a greased bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for 1 to 1½ hours until it doubles in size.
  5. Prepare Filling: In a small bowl, mix together the brown sugar and ground cinnamon.
  6. Shape Rolls: Punch down the risen dough and roll it out into a 16×12-inch rectangle. Spread the softened butter evenly over the surface, then sprinkle the cinnamon sugar mixture on top.
  7. Roll and Slice: Roll the dough tightly from the long side to form a log. Slice the log into 12 even rolls.
  8. Second Rise: Place the rolls into a greased 9×13-inch baking dish, cover, and let them rise again for 30–45 minutes until puffy.
  9. Bake: Preheat oven to 350°F (175°C). Bake the rolls for 22–28 minutes or until golden brown on top.
  10. Prepare Icing: While rolls are baking, beat the cream cheese and butter together until smooth. Gradually add powdered sugar, milk, and vanilla extract, mixing until creamy.
  11. Finish and Serve: Spread the cream cheese icing over the warm rolls and serve immediately for best flavor and texture.

Notes

  • Use extra ripe bananas for the best flavor and natural sweetness.
  • Prepare the rolls the night before by refrigerating them after the second rise, then bake fresh in the morning.
  • Add chopped walnuts or pecans to the filling for extra crunch and texture.
