Ingredients
Scale
Banana Bread Cinnamon Rolls Dough
- 3 medium ripe bananas (overripe recommended)
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar (brown sugar optionally for deeper flavor)
- 1 tbsp baking powder
- 2 tsp ground cinnamon
- 4 cups all-purpose flour (can substitute with gluten-free blend)
- 1 cup milk (non-dairy milk optional)
Filling and Topping
- 1 cup peanut butter (any nut or seed butter as needed)
- Additional ground cinnamon and sugar for sprinkling
- 2 cups powdered sugar (coconut sugar optional)
- 1 splash milk (to adjust frosting consistency)
Instructions
- Mash Bananas and Mix Dough: In a mixing bowl, mash the ripe bananas until smooth. Add melted butter and granulated sugar, mixing well. Sprinkle in baking powder, ground cinnamon, all-purpose flour, and milk. Stir gently until a soft dough forms.
- Roll Out Dough: Lightly flour a countertop and transfer the dough onto it. Using a rolling pin, roll the dough into a rectangle approximately ½ inch thick.
- Spread Peanut Butter and Sprinkle: Spread a generous layer of peanut butter over the rolled dough, leaving a small border around edges. Evenly sprinkle additional cinnamon and sugar on top.
- Form Rolls: Starting from one long edge, carefully roll the dough into a tight log shape.
- Cut into Slices: Using a sharp knife or bench scraper, cut the rolled log into slices about 1 to 1½ inches wide. Place each slice into a greased baking dish, spaced slightly apart.
- Bake the Rolls: Preheat oven to 350°F (175°C). Bake the cinnamon rolls for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
- Prepare Peanut Butter Frosting: In a separate bowl, beat together peanut butter and powdered sugar. Gradually add a splash of milk, mixing until smooth and creamy.
- Frost the Rolls: Once the rolls have cooled slightly for 5-10 minutes, spread the peanut butter frosting generously over the warm rolls.
Notes
- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
- Overripe bananas yield the best flavor and sweetness in the dough.
- You can use brown sugar instead of granulated sugar for a richer taste.
- Non-dairy milk options like almond or oat milk work well for lactose-free diets.
- Adjust cinnamon quantity based on personal preference for spice intensity.
- Peanut butter frosting can be swapped for other nut or seed butters to suit dietary restrictions.
