- Roast Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the sweet potato strips with 2 tablespoons of olive oil until they are well coated. Spread them evenly on a baking sheet lined with parchment paper. Roast the sweet potatoes for about 40 minutes, flipping or tossing them occasionally to ensure they become tender and slightly crispy on all sides.
- Brown Beef: While the sweet potatoes roast, heat 1 tablespoon of olive oil in a pan over medium-high heat. Add half of the diced onion and cook until it softens and becomes translucent. Then, add the ground beef to the pan. Cook the beef thoroughly, breaking it up with a spatula as it browns, until fully cooked and no longer pink.
- Assemble Bowls: Divide the chopped romaine lettuce evenly among three bowls. Top each bowl with the cooked ground beef and sautéed onions. Add diced tomatoes, pickles (if using), and shredded cheddar cheese evenly over the bowls.
- Make Sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, Worcestershire sauce, smoked paprika, onion powder, and garlic powder until smooth and well combined.
