Ingredients
Scale
Beetroot Spread
- 2 medium cooked beets, peeled and chopped
- 1 cup ricotta cheese
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 small garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Toppings
- 1 tablespoon fresh dill or parsley, finely chopped
- 1 tablespoon walnuts, finely chopped (optional)
Instructions
- Prepare the Beets: Use cooked and peeled beets that are chopped into manageable pieces for blending. Roasted beets add a deeper flavor, but boiled beets work well too.
- Blend Ingredients: Place the chopped beets in a food processor and blend until mostly smooth to create the base of your spread.
- Add Remaining Ingredients: Add the ricotta cheese, olive oil, lemon juice, minced garlic, salt, and black pepper into the food processor with the beets. Blend again until the mixture is creamy and fully combined.
- Taste and Adjust: Taste the spread and adjust the seasoning if necessary, adding more salt, pepper, or olive oil for a smoother texture if desired.
- Garnish and Serve: Transfer the beet and ricotta spread into a serving bowl. Sprinkle the finely chopped fresh dill or parsley on top, and add walnuts if using. Serve immediately with toasted bread, crackers, or fresh vegetables for dipping.
Notes
- Roasted beets provide a richer, deeper flavor but boiled beets are a convenient alternative.
- For a smoother and slightly richer texture, add an extra tablespoon of olive oil while blending.
- Goat cheese can be substituted for ricotta cheese to create a tangier version of the spread.
