- 1 cup unsalted butter
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 3 cups quick oats
Chocolate-Peanut Butter Layer
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter
Instructions
- Prepare the oat mixture: In a saucepan over medium heat, melt the butter. Stir in the brown sugar and vanilla extract until the sugar is dissolved and the mixture is smooth.
- Cook oats with mixture: Add the quick oats to the saucepan and cook for 2 to 3 minutes, stirring constantly to ensure the oats are well coated and heated through.
- Layer base oats: Line an 8×8-inch dish with parchment paper. Spread half of the oat mixture evenly as the bottom layer in the dish.
- Prepare chocolate-peanut butter layer: In a microwave-safe bowl, melt the semisweet chocolate chips and peanut butter together in short bursts, stirring frequently, until smooth and fully combined.
- Add chocolate layer: Spread the melted chocolate and peanut butter mixture evenly over the oat base layer.
- Top with remaining oats: Spread the remaining half of the oat mixture on top, gently patting down to form an even layer.
- Chill and set: Refrigerate the assembled bars for at least 2 hours until firm. Once chilled, slice into bars and serve.
