Ingredients
Scale
Birria Beef
- 2 cups shredded beef (chuck roast)
- 2 tablespoons birria spice mix
- Salt and pepper to taste
- 2 tablespoons oil for searing
- Soaked dried chilies (such as guajillo and ancho)
- 2 cloves garlic
- 1 teaspoon cumin seeds
- 1 teaspoon dried oregano
- 2 tablespoons vinegar (white or apple cider)
- 4 cups water or beef broth
Sandwich
- 1 cup sharp cheddar cheese, shredded
- 4 slices sourdough or Texas toast bread
- Butter for grilling
Consomé
- 1 cup consomé (beef broth from cooking birria)
Instructions
- Season and Sear the Beef: Season the chuck roast with salt and pepper. Heat oil in a pot over medium-high heat, then sear the beef until browned on all sides to lock in the flavors.
- Prepare Birria Sauce and Simmer: Blend soaked dried chilies, garlic, cumin seeds, oregano, and vinegar until smooth. Add this mixture to the pot along with water or beef broth. Cover and simmer gently for about 3 hours or until the beef is very tender.
- Shred the Beef: Remove the beef from the pot and shred it finely. Return the shredded beef to the pot with some of the cooking broth to keep it moist and flavorful.
- Assemble and Grill Sandwiches: Butter one side of each bread slice. On the unbuttered side, layer shredded beef and shredded sharp cheddar cheese, then top with another slice of bread, buttered side out. Grill the sandwiches in a skillet over medium heat until the bread is golden brown and the cheese melts, flipping carefully to cook both sides evenly.
- Serve with Consomé: Warm the consomé (the beef broth from cooking) and serve it hot alongside the grilled cheese sandwiches for dipping. Enjoy your Birria Grilled Cheese Dippers immediately for the best flavor and texture.
Notes
- For authentic flavor, use guajillo and ancho chilies soaked in warm water before blending.
- Adjust the birria spice mix according to your heat preference.
- Use a heavy skillet or griddle for even grilling of the sandwiches.
- Consomé can be seasoned with extra salt or lime juice to enhance the dipping experience.
- Leftover birria can be refrigerated for up to 3 days or frozen for longer storage.
