- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
- Salsa or hot sauce (optional)

Instructions
- Preheat and Prepare Sweet Potatoes: Preheat your oven to 425°F (220°C). In a bowl, toss the diced sweet potatoes with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Roast Sweet Potatoes: Spread the seasoned sweet potatoes evenly on a baking sheet. Roast for 20-25 minutes, stirring halfway through to ensure even caramelization, until the potatoes are tender and slightly caramelized.
- Heat Black Beans: While the sweet potatoes roast, warm the black beans in a small saucepan over medium heat. Season with salt and pepper to taste and keep warm.
- Warm Tortillas: Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds per side, until they are warm and flexible.
- Assemble Tacos: Divide the roasted sweet potatoes and warmed black beans evenly among the tortillas.
- Add Fresh Toppings: Top each taco with avocado slices, finely chopped red onion, chopped cilantro, and a squeeze of fresh lime juice for brightness.
- Add Optional Toppings: If desired, add salsa or hot sauce, along with crumbled feta or cotija cheese for extra flavor and creaminess.
- Serve: Serve the tacos immediately with extra lime wedges on the side for added zest.
