Ingredients
Scale
Tart Shell
- 1 pre-made tart shell
Lemon Curd Filling
- 1/2 cup fresh lemon juice
- 1/2 cup sugar
- 3 large eggs
- 1/4 cup butter, cubed
- 1 tablespoon lemon zest
Topping
- 1 cup fresh blueberries
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the tart.
- Prepare lemon curd mixture: In a medium saucepan, whisk together the fresh lemon juice, sugar, and whole eggs until smooth and combined.
- Cook lemon curd: Place the saucepan over medium heat and cook the mixture, whisking constantly for 5 to 7 minutes until the mixture thickens but does not boil to avoid curdling.
- Add butter: Remove the saucepan from heat and quickly stir in the cubed butter until completely melted and incorporated, resulting in a smooth lemon curd.
- Fill the tart shell: Pour the lemon curd into the prepared tart shell and smooth the surface evenly.
- Bake the tart: Place the filled tart in the preheated oven and bake for 10 to 12 minutes until the lemon curd is set but still slightly jiggly in the center.
- Cool and chill: Remove the tart from the oven and allow it to cool to room temperature. Once cooled, refrigerate for at least one hour to fully set and chill the curd.
- Add toppings: Before serving, top the chilled tart with fresh blueberries and sprinkle the lemon zest over the top for added brightness and decoration.
- Serve: Cut the tart into slices and serve cold for a refreshing and delicious dessert.
