- ¼ cup red onion, chopped
- ¼ cup red cabbage, chopped into slivers
- ¼ cup carrots, shredded
Dressing Ingredients
- 2 tablespoons Dijon mustard
- 3 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 garlic clove, minced
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare Salad: In a medium bowl, combine the chopped broccoli, cooked and crumbled bacon, chopped red onion, red cabbage, and shredded carrots. Set aside while preparing the dressing.
- Make Dressing: In a separate bowl, whisk together Dijon mustard, olive oil, honey, apple cider vinegar, minced garlic, salt, and pepper until the mixture is smooth and well combined.
- Toss: Pour the prepared honey Dijon dressing over the broccoli salad. Toss thoroughly to ensure all ingredients are evenly coated with the dressing.
- Serve or Chill: Serve the salad immediately or refrigerate for at least one hour to allow the flavors to meld together. Keep refrigerated if not serving right away.
Notes
- You can substitute the bacon with turkey bacon for a leaner option.
- For a vegetarian version, omit the bacon or replace it with roasted chickpeas.
- Allowing the salad to chill enhances flavor blending and improves texture.
- Adjust the honey and Dijon mustard quantities according to your sweetness and tang preference.
- Use fresh garlic for best flavor, but garlic powder can be a substitute if needed.
