- Combine Wet Ingredients: In a large mixing bowl, mash the ripe bananas thoroughly. Add the brown sugar, granulated sugar, vegetable oil, egg, and vanilla extract. Mix until the wet ingredients are smooth and fully incorporated.
- Fold Dry into Wet: Gradually add the dry ingredient mixture into the wet ingredients. Fold gently until just combined to avoid overmixing, which can make the muffins dense.
- Add Optional Mix-ins: If using, gently fold in the chopped walnuts or chocolate chips evenly throughout the batter.
- Fill Muffin Cups: Evenly distribute the batter among the 12 muffin cups, filling each about three-quarters full to give the muffins room to rise.
