Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat Oven: Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, cream together butter, brown sugar, and granulated sugar. Beat in eggs one at a time, then add vanilla.
  3. Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  4. Add Mix-Ins: Fold in chopped Pop-Tarts and white chocolate chips if using. Scoop dough onto baking sheets.
  5. Bake: Bake for 10–12 minutes until golden. Let cool.
  6. Make Glaze: Whisk together powdered sugar, milk, vanilla, and cinnamon. Drizzle over cookies.
