For the Bruschetta Dip:
- 2 cups (300 g) cherry tomatoes, diced
- 1/4 cup (10 g) fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces (225 g) fresh mozzarella cheese, diced
For serving:
- toasted baguette slices
Instructions
- In a medium bowl, combine the diced tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and black pepper.
- Gently fold in the diced mozzarella cheese.
- Serve chilled or at room temperature with toasted baguette slices for dipping.
Stir until well mixed.
Cover and refrigerate for at least 30 minutes to let the flavors meld.
Notes
- For extra flavor, roast the tomatoes before dicing.
- You can also add a drizzle of balsamic glaze on top just before serving.
