Ingredients
Scale
Latkes
- 4 medium potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup buffalo wing sauce
- Vegetable oil, for frying
Blue Cheese Dip
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup crumbled blue cheese
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- Drain Potatoes and Onion: Place grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture thoroughly to prevent soggy latkes.
- Mix Latke Batter: In a large bowl, combine drained potatoes and onion with beaten eggs, flour, garlic powder, smoked paprika, salt, and black pepper. Mix well to form an even batter.
- Heat Oil: Pour about 1/4 inch of vegetable oil into a large skillet and heat over medium-high until hot but not smoking.
- Fry Latkes: Form the potato mixture into small patties. Fry them in the hot oil for about 3–4 minutes on each side until golden brown and crispy. Remove and drain on paper towels to remove excess oil.
- Coat with Buffalo Sauce: Place the hot latkes in a bowl and toss gently with the buffalo wing sauce until evenly coated.
- Prepare Blue Cheese Dip: In a separate bowl, combine sour cream, mayonnaise, crumbled blue cheese, lemon juice, salt, and pepper. Mix until smooth and well combined.
- Serve: Serve the buffalo-coated latkes warm alongside the blue cheese dip for dipping.
Notes
- Be sure to squeeze out as much water as possible from the potatoes and onions to ensure crispy latkes.
- Adjust the amount of buffalo sauce according to your preferred spice level.
- The latkes are best enjoyed fresh and hot for maximum crispiness.
- You can substitute the all-purpose flour with gluten-free flour if needed.
- Blue cheese dip can be stored refrigerated for up to 2 days.
- Use a thermometer to keep oil temperature steady around 350°F for perfect frying.
