  2. Arrange pretzels: Place the mini pretzel twists into a large, heatproof mixing bowl, ready for the toffee coating.
  3. Make the toffee sauce: In a 3- to 4-quart saucepan over medium heat, combine packed light brown sugar, sliced butter pats, and light corn syrup. Stir constantly as it heats and bring the mixture to a gentle boil. Allow it to boil steadily for 5 minutes to develop the toffee flavor.
  4. Add vanilla and baking soda: Remove the saucepan from heat. Carefully stir in pure vanilla extract and baking soda. The mixture will bubble vigorously; continue stirring until it becomes smooth and uniform.
  5. Coat the pretzels: Immediately pour the hot toffee sauce over the pretzels in the bowl. Using a wooden spoon or silicone spatula, gently stir until all pretzel pieces are fully coated with the toffee mixture.
