Lasagna Roll Ups

  • 9-12 no-boil lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • Balsamic glaze for drizzling (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the roll ups.
  2. Prepare Noodles: If not using no-boil noodles, cook lasagna noodles according to package instructions until al dente. Lay them flat on a clean surface to prevent sticking.
  3. Make Cheese Mixture: In a medium bowl, combine ricotta cheese, half of the mozzarella, grated Parmesan, chopped spinach, garlic powder, salt, and black pepper until well mixed.
  4. Assemble Roll Ups: Spread about 2 to 3 tablespoons of the cheese mixture evenly over each noodle. Top with a few cherry tomato halves and a sprinkle of chopped basil, then carefully roll up each noodle tightly.
  5. Prepare Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9×13-inch baking dish. Place each roll-up seam side down into the dish.
  6. Add Toppings: Top the arranged roll ups with the remaining 1 cup of marinara sauce and sprinkle the remaining shredded mozzarella cheese evenly over the top. Drizzle 1 tablespoon of olive oil over everything.
