Bread:
- 3 1/2 cups bread flour
- 1/2 cup whole wheat flour
- 1 1/2 teaspoons salt
- 1/4 teaspoon instant yeast
- 1 3/4 cups lukewarm water

- 1 cup caramelized onions (about 2 large onions, cooked down until golden and sweet)
- 1 cup shredded Gouda cheese
- 1/4 cup sourdough starter (active and bubbly)
Instructions
- Mix the Dough: Combine bread flour, whole wheat flour, salt, and yeast. Add water and sourdough starter, mix until a dough forms.
- Rest the Dough: Cover and let rest for 30 minutes.
- Add-Ins: Fold in caramelized onions and Gouda. Let rise for 8–12 hours.
- Shape and Proof: Shape into a loaf, proof for 1–2 hours.
- Bake: Preheat oven to 450°F. Bake the loaf in a Dutch oven for 30 minutes covered, then 10–15 minutes uncovered.
- Cool and Enjoy: Cool on a wire rack before slicing.
Notes
- You can make the caramelized onions ahead of time and store in the fridge.
- Smoked Gouda adds a rich, smoky flavor but regular Gouda works beautifully too.
- This bread is excellent for grilled cheese sandwiches or served with soup.
