Description

Bread:

  • 3 1/2 cups bread flour
  • 1/2 cup whole wheat flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon instant yeast
  • 1 3/4 cups lukewarm water

Add-Ins:

  • 1 cup caramelized onions (about 2 large onions, cooked down until golden and sweet)
  • 1 cup shredded Gouda cheese
  • 1/4 cup sourdough starter (active and bubbly)

Instructions

  1. Mix the Dough: Combine bread flour, whole wheat flour, salt, and yeast. Add water and sourdough starter, mix until a dough forms.
  2. Rest the Dough: Cover and let rest for 30 minutes.
  3. Add-Ins: Fold in caramelized onions and Gouda. Let rise for 8–12 hours.
  4. Shape and Proof: Shape into a loaf, proof for 1–2 hours.
  5. Bake: Preheat oven to 450°F. Bake the loaf in a Dutch oven for 30 minutes covered, then 10–15 minutes uncovered.
  6. Cool and Enjoy: Cool on a wire rack before slicing.

Notes

  • You can make the caramelized onions ahead of time and store in the fridge.
  • Smoked Gouda adds a rich, smoky flavor but regular Gouda works beautifully too.
