Ingredients
Scale
Meat and Vegetables
- 1 pound breakfast sausage
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
Dairy and Bread
- 2 cups shredded sharp cheddar cheese, divided
- 1 tube refrigerated biscuits (16 ounces)
- 8 large eggs
- 1 cup whole milk
Spices and Garnish
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully crumbled. Remove the sausage from the skillet and drain any excess grease, leaving about 1 tablespoon for cooking the vegetables.
- Sauté Vegetables: Add the olive oil, diced onion, red bell pepper, and green bell pepper to the skillet. Sauté for about 5 minutes until the vegetables are softened and fragrant.
- Prepare Biscuit Base: Cut the refrigerated biscuits into quarters and evenly place them in the bottom of the prepared baking dish to form a base layer.
- Layer Sausage and Vegetables: Spread the cooked sausage evenly over the biscuit pieces, followed by the sautéed onion and peppers. Sprinkle 1 1/2 cups of shredded cheddar cheese evenly over the top.
- Mix Egg Custard: In a large bowl, whisk together the eggs, whole milk, garlic powder, smoked paprika, salt, and black pepper until the mixture is smooth and well combined.
- Assemble Casserole: Pour the egg mixture evenly over the layered ingredients in the baking dish. Then sprinkle the remaining 1/2 cup of cheddar cheese on top of the casserole.
- Bake: Place the casserole uncovered in the preheated oven and bake for 35 to 40 minutes, or until the eggs are fully set and the top is golden brown.
- Rest and Garnish: Remove the casserole from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before slicing and serving.
Notes
- This casserole can be prepared the night before and refrigerated; just bake it in the morning for a convenient meal.
- For variation, swap the breakfast sausage with cooked bacon or ham.
- Add a pinch of red pepper flakes when mixing the eggs for a spicy kick.
