  • 1 package (16 ounces) potato gnocchi
  • ½ pound lean ground beef

  • 1 can (10 ounces) Rotel Diced Tomatoes and Green Chiles (undrained)
  • 1 cup beef broth
  • ¼ cup heavy cream
  • 1 cup shredded mild cheddar cheese
  • 3 tablespoons sliced green onion


Instructions

  1. Toast the Gnocchi: Melt the butter in a large cast iron or oven-safe skillet over medium-high heat. Add the potato gnocchi and cook on one side for 2 minutes until browned and toasted. Toss the gnocchi and cook for another 2 minutes to brown the other side. Remove the gnocchi to a large plate, cover, and set aside.
  2. Cook the Beef and Aromatics: Place the skillet back on medium-high heat. Add the lean ground beef seasoned with salt, pepper, cumin, and paprika. Add the diced onion and minced garlic. Cook, stirring occasionally, until the beef is browned and cooked through. Drain any excess fat from the skillet.
  3. Simmer with Tomatoes and Broth: Return the toasted gnocchi to the skillet along with the undrained diced tomatoes and green chiles and beef broth. Gently stir to combine all ingredients. Bring the mixture to a boil, then reduce heat to low. Cover with a lid and simmer for a few minutes until the gnocchi is tender and most of the liquid has been absorbed.
  4. Add Cream and Cheese, then Broil: Remove the skillet from heat and stir in the heavy cream and half of the shredded cheddar cheese. Evenly sprinkle the remaining cheddar cheese on top. Place the skillet under the broiler until the cheese is melted, bubbly, and lightly browned. Watch closely to prevent burning.
