Ingredients
Scale
Beef Filling
- 1 lb ground beef
- 1 small onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Quesadilla Assembly
- 1 cup shredded cheese (cheddar or your favorite blend)
- 4 large flour tortillas
- Cooking oil for frying (about 1-2 tablespoons)
Instructions
- Heat the skillet: Place a skillet over medium heat and add cooking oil. Allow the oil to warm up for a minute to prepare for sautéing the vegetables.
- Sauté onions and bell peppers: Add the chopped onion and bell pepper to the skillet. Cook for 3-5 minutes, stirring occasionally, until the vegetables become soft and slightly translucent.
- Add ground beef and seasonings: Add the ground beef to the skillet along with garlic powder, cumin, salt, and pepper. Stir to combine with the sautéed veggies.
- Cook the beef mixture: Continue cooking, breaking up the beef with a spoon, until it turns brown and is fully cooked through, about 7-8 minutes.
- Incorporate cheese: Remove the skillet from heat and stir in the shredded cheese until it starts to melt and blends evenly with the meat mixture.
- Assemble quesadilla: Place one flour tortilla in a clean skillet over medium heat. Spoon the cheesy beef mixture evenly over the tortilla, then top with another tortilla to form a sandwich.
- Cook quesadilla until golden: Cook each side for about 2-3 minutes or until the tortilla is crispy and golden brown. Carefully flip using a spatula to avoid spilling the filling.
- Serve: Remove the quesadilla from the skillet, let it cool slightly, then cut into wedges and serve warm.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- Use whole wheat tortillas for a healthier twist.
- Add salsa, sour cream, or guacamole as toppings for extra flavor.
- Make sure to not overfill the quesadilla to prevent filling from spilling out.
- Leftover quesadillas can be reheated in a skillet or toaster oven to retain crispiness.
