Instructions

- Mix eggs: In a large bowl, whisk together the 6 large eggs and 1 cup liquid egg whites until the mixture is smooth and fully combined.
- Add fillings: Stir in 1/2 cup cottage cheese, 1/2 cup shredded cheddar cheese, 1/2 cup finely chopped red bell pepper, 1/2 cup chopped fresh spinach, 1/4 cup chopped green onions, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until evenly distributed.
- Fill muffin cups: Divide the egg mixture evenly among the prepared muffin cups, filling each about three-quarters full to allow room for rising.
- Bake: Bake in the preheated oven for 22 to 25 minutes, or until the tops are set and lightly golden. The muffins should be firm to the touch and cooked through.
