- 1 ½ cups Mozzarella Cheese, shredded (divided)
- ½ cup Cooked Corn Kernels
- ½ cup Green Bell Pepper, finely chopped

- ½ teaspoon Chili Flakes
- 1 teaspoon Italian Seasoning
- Pinch of Salt

- 8 slices Sandwich Bread
- 2 tablespoons Butter, softened (plus extra for toasting)
Instructions
- Heat the Skillet: Warm a non-stick skillet over medium heat to prepare for toasting the triangles.
- Prepare the Filling: In a bowl, mix together the chopped green bell pepper, onion, cooked corn kernels, chili flakes, Italian seasoning, salt, and half of the shredded mozzarella cheese until well combined.
- Prepare the Skillet for Toasting: Lightly butter the skillet or use cooking spray to prevent sticking and help with browning.
- Assemble the Triangles: Slightly flatten each slice of sandwich bread to make it more pliable. Spread a layer of pizza sauce evenly over each slice. Then place a generous amount of the prepared filling on top, followed by the remaining mozzarella cheese. Fold the bread slice diagonally to form a triangle and firmly press the edges together to seal the filling inside.
- Toast the Triangles: Butter the outside of each triangle generously. Place them in the warmed skillet and toast for approximately 2 to 3 minutes on each side, or until they turn golden brown and crispy.
- Rest and Garnish: Remove the toasted triangles from the skillet and let them rest for a minute. If desired, sprinkle additional herbs or chili flakes over the top for extra flavor.
- Serve: Serve the hot pizza triangles immediately with your favorite dipping sauces such as garlic mayo or extra pizza sauce for dipping.
