Ingredients
Scale
Filling
- 8 oz cream cheese, softened
- â…“ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
Egg Rolls
- 12 egg roll wrappers
- Vegetable oil for frying or spray oil for baking
- Powdered sugar, for dusting (optional)
Instructions
- Prepare the cream cheese mixture: In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy, ensuring there are no lumps.
- Lay out the wrappers: Place one egg roll wrapper flat on a clean surface with a corner pointing towards you, forming a diamond shape.
- Add the fillings: Spoon about 1 tablespoon of the cream cheese mixture into the center of the wrapper, then top it with 1 tablespoon of cherry pie filling evenly on top of the cream cheese.
- Roll the egg rolls: Fold the bottom corner of the wrapper up over the filling, then fold in the two side corners snugly to encase the filling, and carefully roll up the wrapper tightly towards the top corner. Seal the edge by moistening with a little water to ensure the egg roll stays closed during cooking.
- Repeat rolling: Continue the process with the remaining wrappers and filling until all 12 egg rolls are assembled.
- Frying method: Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry 2 to 3 egg rolls at a time until they are golden brown and crispy, cooking about 2 to 3 minutes per side. Remove with a slotted spoon and drain on paper towels to remove excess oil.
- Baking method: Preheat the oven to 400°F (200°C). Arrange the egg rolls on a parchment-lined baking sheet, spray them lightly with oil, and bake for 12 to 15 minutes. Turn the egg rolls halfway through baking to ensure even browning and crispiness.
- Finish and serve: Once cooked, allow the egg rolls to cool slightly, then dust with powdered sugar if desired before serving for an extra sweet touch.
Notes
- For a richer flavor, allow the cream cheese to soften at room temperature before mixing.
- Ensure the oil is properly heated to 350°F for frying to achieve a crispy texture without absorbing too much oil.
- If baking, spraying the egg rolls with oil helps mimic the crispiness of frying.
- Sealing the egg roll edges with water prevents filling from leaking during cooking.
- These egg rolls are best served warm but can be reheated in an oven for a few minutes to restore crispness.
- Use a slotted spoon when frying to easily remove egg rolls from hot oil.
