This Chicken Mashed Potato Bowl is a comforting, hearty meal featuring creamy mashed potatoes topped with seasoned shredded chicken, sweet corn, rich chicken gravy, and melted cheddar cheese. It’s a quick and easy dish perfect for weeknight dinners, combining classic American flavors into a single satisfying bowl.

Ingredients

Scale

Mashed Potato Base

  • 2 cups cooked mashed potatoes
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Chicken Mixture

  • 2 cups cooked shredded or diced chicken breast
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Additional Toppings

  • 1 cup corn kernels
  • 1 cup chicken gravy
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions (optional)

Instructions

  1. Prepare the Mashed Potatoes: If not already done, prepare the mashed potatoes and keep them warm until ready to assemble the bowls.
  2. Heat the Chicken: In a skillet over medium heat, melt butter and add the cooked shredded or diced chicken breast. Season with garlic powder, onion powder, salt, and black pepper. Stir and heat until the chicken is warmed through.
  3. Warm the Corn: Heat the corn kernels in a small saucepan over low heat or microwave until hot.
  4. Heat the Gravy: Warm the chicken gravy until hot, either on the stovetop or in the microwave.
  5. Assemble the Bowls: Divide the warm mashed potatoes evenly between serving bowls, spreading them out to form a base layer.
  6. Add Chicken and Corn: Top the mashed potatoes with the seasoned warm chicken, then spoon the warmed corn over the chicken.
  7. Top with Gravy and Cheese: Pour the hot chicken gravy over the entire bowl, then sprinkle shredded cheddar cheese on top.
  8. Garnish and Serve: Garnish each bowl with chopped green onions if desired and serve immediately while hot.

Notes

  • Rotisserie chicken works well for this recipe and saves cooking time.
  • You can substitute turkey for chicken if preferred.
  • For extra flavor, mix a little butter and shredded cheese directly into the mashed potatoes before assembling the bowls.
