Instructions
- Prepare the filling: In a medium bowl, combine shredded cooked chicken, shredded cabbage, grated carrots, sliced green onions, soy sauce, sesame oil, and grated fresh ginger. Toss all ingredients together until evenly mixed and flavorful.
- Roll the spring rolls: Lay a spring roll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of the filling near the bottom corner. Fold the bottom corner over the filling, then fold in both sides snugly. Roll tightly toward the top corner and seal the edge using a dab of the cornstarch and water mixture. Repeat the process with the remaining wrappers and filling.
- Heat the oil: In a deep skillet or pot, heat 2 to 3 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the correct frying temperature for crisp, non-greasy rolls.
- Fry the spring rolls: Fry the spring rolls in batches for 3 to 4 minutes, turning occasionally with tongs to ensure even golden browning. Once crisp and golden, remove them carefully and drain on paper towels to absorb excess oil.
- Serve: Serve the hot spring rolls immediately with your choice of sweet chili sauce, soy sauce, or peanut dipping sauce for a delicious appetizer or snack.

- You can use pre-cooked rotisserie chicken to save time during preparation.
- For a lighter, healthier option, bake the spring rolls at 400°F (200°C) for 15 to 20 minutes, flipping halfway through.
