Instructions

  3. Chill the filling: Cover the bowl and refrigerate the chickpea salad mixture for 30 minutes to allow the flavors to meld.
  4. Assemble pinwheels: Lay the tortillas flat on a clean surface. Spread the chilled chickpea salad filling evenly over each tortilla, then place a handful of baby spinach on one half of each.
