Chickpea Salad Filling

- Pepper, to taste
- Garlic salt, to taste
- Hot sauce, to taste

- 2 large tortillas or wraps
- 2 handfuls baby spinach

- Prepare the filling: In a large bowl, mash the drained chickpeas with a fork until mostly smooth. Add the avocado and continue mashing until the mixture becomes creamy.
- Combine ingredients: Stir in the finely chopped jalapeño, diced red onion, mustard, vegan mayo, pepper, garlic salt, and hot sauce. Mix thoroughly until all ingredients are well combined.
- Chill the filling: Cover the bowl and refrigerate the chickpea salad mixture for 30 minutes to allow the flavors to meld.
- Assemble pinwheels: Lay the tortillas flat on a clean surface. Spread the chilled chickpea salad filling evenly over each tortilla, then place a handful of baby spinach on one half of each.
- Roll and slice: Roll the tortillas tightly starting from the side with the spinach, rolling toward the opposite edge. Using a sharp knife, cut each wrap into 8 bite-sized pinwheel pieces.
