Ingredients
Chicken and Marinade
- 1 lb boneless, skinless chicken breast, thinly sliced
- 1 tbsp low-sodium soy sauce
- 1 tsp cornstarch
- Pinch of black pepper
Vegetables and Aromatics
- 2 cups fresh broccoli florets
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
Sauce
- 1/4 cup low-sodium soy sauce (divided)
- 2 tablespoons oyster sauce
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch (divided)
- 1/2 cup chicken broth
- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes (optional)
Other
- 2 tablespoons vegetable oil, divided
- Salt and black pepper to taste
- Cooked white rice or noodles for serving
- Sesame seeds and sliced green onions for garnish (optional)
Instructions
- Prepare the marinade: In a bowl, combine 1 tablespoon soy sauce, 1 teaspoon cornstarch, and a pinch of black pepper. Add the thinly sliced chicken breast and marinate for 10 minutes to tenderize and flavor the meat.
- Make the sauce: In a small bowl, whisk together the remaining 1/4 cup soy sauce, oyster sauce, rice vinegar, remaining cornstarch, chicken broth, sesame oil, and red pepper flakes if using. Set aside.
- Cook the broccoli: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli and stir-fry for 3 to 4 minutes until it becomes bright green and slightly tender. Remove broccoli from the pan and set aside.
- Cook the chicken: Add the remaining 1 tablespoon vegetable oil to the same skillet. Add the marinated chicken and cook for 5 to 6 minutes, stirring frequently, until the chicken is cooked through and no longer pink.
- Add aromatics: Stir in the minced garlic and grated ginger with the chicken and cook for about 1 minute until fragrant, enhancing the flavor of the dish.
- Combine ingredients: Return the cooked broccoli to the skillet with the chicken. Stir everything together to evenly distribute the ingredients.
- Pour the sauce: Pour the prepared sauce over the chicken and broccoli mixture. Stir continuously for 2 to 3 minutes until the sauce thickens and coats all the ingredients well.
- Serve and garnish: Remove from heat and serve the stir fry hot over cooked white rice or noodles. Garnish with sesame seeds and sliced green onions if desired for added texture and flavor.
