Instructions

  1. Pit and Process Dates: Pit the fresh dates and place them into a food processor. Add almond flour, sunflower seed butter, vanilla extract, salt, and 2 tablespoons of water. Pulse the mixture until it achieves a dough-like consistency that holds together.
  2. Adjust Consistency: If the mixture is too dry, add an additional tablespoon of water and pulse again to reach a sticky yet moldable dough texture suitable for pressing into a pan.
  3. Press into Pan: Line an 8×8 inch baking pan with parchment paper. Press the date and almond dough evenly into the pan, creating a flat, compact base layer.
  4. Melt Chocolate: In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips together with the coconut oil until smooth and fully combined.
  5. Top and Chill: Pour the melted chocolate mixture evenly over the pressed dough base. Smooth the surface with a spatula to cover completely. Refrigerate the pan for about 30 minutes or until the chocolate topping is firm and set.
  6. Slice and Enjoy: Once set, remove the bars from the pan using the parchment edges. Slice into 12 bars and store them in the refrigerator to keep firm and fresh until ready to serve.
