For the Chocolate Raspberry Trifle:

  • 1 (9×13-inch) pan chocolate cake (baked and cooled)
  • 2 cups fresh raspberries
  • 3 tablespoons raspberry jam
  • 2 tablespoons water
  • 2 cups cold heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (3.9-ounce) package instant chocolate pudding mix
  • 2 cups cold milk
  • 1 cup chocolate shavings or curls for garnish

Instructions

  1. Cut the chocolate cake into 1-inch cubes. In a small bowl, stir together raspberry jam and water until smooth.
  2. In a large bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form; set aside.
  3. In another bowl, prepare the chocolate pudding by whisking the pudding mix with cold milk for 2 minutes until thickened.
  4. To assemble the trifle, place a layer of chocolate cake cubes at the bottom of a large trifle dish or individual cups. Brush or drizzle some of the raspberry jam mixture over the cake.
  5. Spoon a layer of chocolate pudding over the cake, followed by a layer of whipped cream and a handful of fresh raspberries.
  6. Repeat layers until all ingredients are used, finishing with whipped cream on top. Garnish with chocolate shavings and additional raspberries. Chill for at least 1 hour before serving.
