Ingredients
Scale
Dressing
- 1 cup Mayonnaise (Try Greek yogurt for a lighter twist)
- 2 tablespoons Sugar (Adjust according to your taste preference)
- 1/4 cup Unfiltered Apple Cider Vinegar (Regular vinegar works if needed)
- 2 tablespoons Lemon Juice (Use juice from one lemon for optimal brightness)
- 1 teaspoon Onion Powder (Fresh minced onion can also be used)
- 1 teaspoon Granulated Garlic (Fresh garlic can be used but changes the intensity)
- 1 teaspoon Celery Salt (Regular salt can be used but varies in complexity)
- to taste Sea Salt & Black Pepper (Adjust to your personal preference)
Vegetables
- 4 cups Green Cabbage, shredded (Red cabbage is a colorful substitute)
- 2 medium Carrots, shredded (Other shredded veggies like bell peppers can be used)
- 1/2 cup Green Onions, sliced (Substitute with regular onions for stronger taste)
Instructions
- Prepare the Dressing: In a large bowl, whisk together the mayonnaise, sugar, apple cider vinegar, lemon juice, onion powder, granulated garlic, celery salt, sea salt, and black pepper until the mixture is smooth and creamy.
- Combine Vegetables: Add the shredded green cabbage, shredded carrots, and sliced green onions to the bowl with the dressing. Gently toss everything together to coat the vegetables evenly without bruising them.
- Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour. For best flavor, you can let it chill up to 24 hours, allowing the flavors to meld and the cabbage to soften slightly.
- Serve: Just before serving, toss the coleslaw again to redistribute the dressing and maintain the crunchy texture of the vegetables.
Notes
- Use Greek yogurt instead of mayonnaise for a lighter, tangier coleslaw.
- Adjust sugar amount to taste depending on your sweetness preference.
- Red cabbage can be swapped for green cabbage for more color contrast.
- For a sharper flavor, substitute green onions with regular onions.
- Make the coleslaw a day ahead to enhance flavor absorption, but toss before serving.
- Add shredded bell peppers or other crunchy vegetables for a unique twist.
