Description

Crab Scrambled Eggs is a delicious and elegant breakfast recipe that combines the delicate sweetness of fresh Dungeness crab meat with fluffy, creamy scrambled eggs. Perfect for a special morning or weekend brunch, this dish is easy to prepare and offers a rich, savory flavor enhanced by a touch of olive oil, black pepper, and fresh chives or scallions for garnish.

Ingredients

Scale

Egg Mixture

  • 4 large Eggs (preferably local farm eggs)
  • 1 teaspoon Salt (adjust based on crab’s saltiness)
  • 1 teaspoon Olive Oil

Crab and Cooking

  • 1 cup Fresh Crab Meat (Dungeness crab is ideal)
  • 1 teaspoon Olive Oil

Seasoning and Garnish

  • Black Pepper (freshly ground, to taste)
  • Chives or Scallions (thinly sliced, to taste)

Instructions

  1. Prepare the eggs: In a bowl, crack 4 large eggs, removing 1 egg white for added creaminess. Beat them well, then add a teaspoon of olive oil and a pinch of salt; stir lightly to combine.
  2. Heat the pan and sauté the crab: Warm a nonstick pan over medium heat. Once hot, add another teaspoon of olive oil, allowing it to coat the base of the pan evenly. Gently sauté the fresh crab meat for about 1-2 minutes, breaking it into smaller pieces to release moisture and enhance flavor.
  3. Add and cook eggs: Pour the beaten eggs into the pan. As the edges begin to set, reduce the heat to low-medium to prevent overcooking.
  4. Form curds: Using a spatula, gently pull the set edges toward the center, allowing uncooked egg to flow to the edges, forming soft curds throughout the mixture.
  5. Finish cooking: Carefully turn the curds to let any remaining uncooked parts firm up. Remove the pan from heat when eggs are about 90-95% cooked to keep them fluffy and moist.
  6. Season and serve: Sprinkle freshly ground black pepper over the eggs and garnish with thinly sliced chives or scallions as desired. Serve immediately, optionally on toast for extra indulgence.

Notes

  • Removing one egg white creates a creamier texture in the scrambled eggs.
  • Adjust salt carefully depending on the saltiness of the crab meat to avoid over-seasoning.
  • Use fresh crab meat for best flavor; canned crab can be substituted but will alter taste and texture.
  • Serve promptly to enjoy the eggs at their softest and fluffiest consistency.
  • Optional: Serve with toast or your favorite breakfast sides for a more filling meal.
