Instructions

  1. Cream the butter, cream cheese, and sugar: In a large mixing bowl, beat the butter, cream cheese, and sugar together until light and fluffy, about 2–3 minutes.
  2. Add egg and extracts: Beat in the egg, vanilla extract, and almond extract until combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Mix wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  5. Chill the dough: Divide dough in half, wrap each portion in plastic wrap, and refrigerate for at least 2 hours.
  6. Preheat oven and roll out dough: Preheat oven to 375°F (190°C) and line baking sheets with parchment paper. Roll dough on a lightly floured surface to 1/4-inch thickness and cut into desired shapes.
  7. Bake: Place cookies 1 inch apart on prepared baking sheets and bake for 8–10 minutes, or until edges are just starting to turn golden.
  8. Cool and decorate: Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely. Decorate as desired.
