Instructions
- Cook Pasta: Bring a large pot of water to a boil and add 1 tablespoon of salt. Cook the linguine pasta according to the package instructions until al dente. Reserve ½ cup of the pasta cooking water, then drain the pasta, cover, and keep warm.
- Prepare Chicken: Place chicken breasts between two sheets of parchment or plastic wrap and gently beat them until even in thickness. Season all over with 1 ½ tablespoons of Cajun seasoning.
- Sear Chicken: Heat 2 teaspoons of olive oil in a large non-reactive skillet over medium-high heat. Once the oil is hot, add the seasoned chicken breasts and sear them on both sides until they have a golden brown crust. Reduce heat to low and cook until the chicken is cooked through and reaches an internal temperature of 165˚F (74˚C). Transfer the chicken to a cutting board, slice into thin strips, and cover to keep warm.
- Sauté Aromatics: In the same skillet, reduce heat to medium and add the unsalted butter and minced garlic. Sauté for 30 to 60 seconds until the garlic is fragrant but not browned. Add the diced tomatoes and continue to sauté for another 2 minutes.
