Ingredients
Scale
Milk Mixture
- 2 cups Whole Milk (use organic grass-fed for best flavor)
- 1 pinch Saffron (or substitute with safflower)
- 1/4 cup Chopped Cashews (can replace with pistachios)
- 1/4 cup Chopped Almonds
- 1/2 cup Sugar (adjust to taste)
- 1 teaspoon Ground Cardamom (replace with cinnamon if desired)
Mousse & Garnishes
- 1 cup Heavy Whipping Cream (avoid low-fat alternatives)
- 1 cup Rose Petals (or substitute with edible flowers)
- 1/4 cup Chopped Pistachios
- 1 sheet Vrak (Silver Foil) – optional for decoration
Instructions
- Warm the Milk: Pour whole milk into a nonstick pot and heat over medium heat until it begins to boil, stirring gently to prevent burning.
- Infuse Saffron: Add the saffron strands to the boiling milk and let them steep for about 5 minutes, allowing the color and flavor to fully infuse.
- Cook with Nuts and Sugar: Stir in the chopped cashews, almonds, and sugar, then cook on low heat for 10 more minutes, stirring occasionally until the mixture thickens slightly.
- Add Cardamom and Cool: Mix in the ground cardamom, then remove the pot from the heat. Allow the mixture to cool to room temperature before refrigerating for at least 1 hour.
- Whip the Cream: Using a mixer, beat the heavy whipping cream on high speed until stiff peaks form, ensuring a light and airy texture.
- Combine Mixture and Cream: Gently fold the chilled milk and nut mixture into the whipped cream, blending carefully to maintain airiness.
- Assemble the Mousse: Spoon the mousse into individual serving glasses.
- Garnish: Decorate with rose petals, crushed pistachios, and optionally, apply silver foil sheets on top for an elegant finish.
- Chill and Serve: Refrigerate the mousse until ready to serve and enjoy it chilled for a refreshing, creamy dessert experience.

- Saffron is key for authentic aroma, but safflower is a budget-friendly alternative.
- Adjust sugar according to sweetness preference to keep it balanced.
- Heavy whipping cream must be full-fat for proper stiff peaks and mousse texture.
- Silver foil (Vrak) is edible and purely decorative – optional based on availability.
- Serve chilled for best flavor and texture; can be made up to a day in advance.
