Description

Creamy Ras Malai Mousse is a luscious Indian-inspired eggless dessert combining the rich flavors of saffron-infused milk, aromatic cardamom, and chopped nuts, folded into airy whipped cream and garnished with rose petals and pistachios. This chilled mousse offers a delicate balance of creamy texture and fragrant spices, perfect for a special occasion or an indulgent treat.

Ingredients

Scale

Milk Mixture

  • 2 cups Whole Milk (use organic grass-fed for best flavor)
  • 1 pinch Saffron (or substitute with safflower)
  • 1/4 cup Chopped Cashews (can replace with pistachios)
  • 1/4 cup Chopped Almonds
  • 1/2 cup Sugar (adjust to taste)
  • 1 teaspoon Ground Cardamom (replace with cinnamon if desired)

Mousse & Garnishes

  • 1 cup Heavy Whipping Cream (avoid low-fat alternatives)
  • 1 cup Rose Petals (or substitute with edible flowers)
  • 1/4 cup Chopped Pistachios
  • 1 sheet Vrak (Silver Foil) – optional for decoration

Instructions

  1. Warm the Milk: Pour whole milk into a nonstick pot and heat over medium heat until it begins to boil, stirring gently to prevent burning.
  2. Infuse Saffron: Add the saffron strands to the boiling milk and let them steep for about 5 minutes, allowing the color and flavor to fully infuse.
  3. Cook with Nuts and Sugar: Stir in the chopped cashews, almonds, and sugar, then cook on low heat for 10 more minutes, stirring occasionally until the mixture thickens slightly.
  4. Add Cardamom and Cool: Mix in the ground cardamom, then remove the pot from the heat. Allow the mixture to cool to room temperature before refrigerating for at least 1 hour.
  5. Whip the Cream: Using a mixer, beat the heavy whipping cream on high speed until stiff peaks form, ensuring a light and airy texture.
  6. Combine Mixture and Cream: Gently fold the chilled milk and nut mixture into the whipped cream, blending carefully to maintain airiness.
  7. Assemble the Mousse: Spoon the mousse into individual serving glasses.
  8. Garnish: Decorate with rose petals, crushed pistachios, and optionally, apply silver foil sheets on top for an elegant finish.
  9. Chill and Serve: Refrigerate the mousse until ready to serve and enjoy it chilled for a refreshing, creamy dessert experience.

Notes

  • Use organic grass-fed whole milk for the richest flavor and creaminess.
  • Saffron is key for authentic aroma, but safflower is a budget-friendly alternative.
  • Adjust sugar according to sweetness preference to keep it balanced.
  • Heavy whipping cream must be full-fat for proper stiff peaks and mousse texture.
  • Silver foil (Vrak) is edible and purely decorative – optional based on availability.
  • Serve chilled for best flavor and texture; can be made up to a day in advance.
