Description

This creamy vegetable soup recipe combines cauliflower, broccoli, carrots, and corn with flavorful dried herbs in a comforting blend simmered to perfection. It’s a hearty, healthy, and smooth soup ideal for warming up on chilly days or serving as a nutritious meal.

Ingredients

Scale

Vegetables

  • 1 cup chopped yellow onion (1 small onion)
  • 4 cups cauliflower florets (1 large cauliflower)
  • 2 cups broccoli florets
  • 2 cups chopped carrots
  • 1 cup frozen corn

Liquids

  • 10 cups vegetable broth

Spices & Herbs

  • ½ tablespoon dried garlic
  • ½ tablespoon dried parsley
  • ½ tablespoon dried thyme
  • ½ tablespoon dried Italian seasoning
  • ½ teaspoon black pepper

Instructions

  1. Combine Ingredients: In a 6-quart Dutch oven or large pot, add all the chopped vegetables along with the vegetable broth.
  2. Add Spices: Stir in the dried garlic, parsley, thyme, Italian seasoning, and black pepper, mixing well to incorporate the flavors throughout the soup.
  3. Simmer: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to maintain a gentle simmer. Cover the pot halfway with a lid to allow some steam to escape and let the liquid reduce. Simmer for 45-60 minutes, or until all vegetables are tender and cooked through.
  4. Blend Soup: Using an immersion blender, carefully blend the soup directly in the pot until it reaches a smooth, creamy consistency.
  5. Adjust Consistency: If the soup is too thick, gradually add additional liquid such as water, milk, or vegetable/chicken broth to achieve your preferred texture. Stir well and warm through before serving.

Notes

  • You can substitute fresh herbs for dried if preferred, adjusting quantities accordingly.
  • For a richer flavor, add a splash of cream or coconut milk when adjusting consistency.
  • This soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
  • Feel free to add other vegetables like potatoes or celery to customize the soup.
  • If you don’t have an immersion blender, carefully transfer soup in batches to a regular blender and puree.
