Instructions

- Simmer: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to maintain a gentle simmer. Cover the pot halfway with a lid to allow some steam to escape and let the liquid reduce. Simmer for 45-60 minutes, or until all vegetables are tender and cooked through.
- Blend Soup: Using an immersion blender, carefully blend the soup directly in the pot until it reaches a smooth, creamy consistency.
- Adjust Consistency: If the soup is too thick, gradually add additional liquid such as water, milk, or vegetable/chicken broth to achieve your preferred texture. Stir well and warm through before serving.
