Instructions
- Prepare Apples: Wash, peel, core, and dice 2 medium apples into 1/4 to 1/2 inch cubes. Place them in a bowl.
- Combine Dry Ingredients: In a large mixing bowl, whisk together 1 cup all-purpose flour, 1/4 cup granulated sugar, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg until evenly mixed.
- Prepare Wet Ingredients: In a separate medium-sized bowl, whisk together 2 large eggs, 1/2 cup milk, and 1 teaspoon vanilla extract until smooth and combined.
- Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients. Mix gently with a spoon or spatula until just combined, taking care not to overmix to keep the batter light.
- Fold in Apples: Gently fold the diced apples into the batter until they are evenly distributed throughout.
- Preheat Air Fryer: Preheat your air fryer to 350°F (175°C) for at least 5 minutes. Lightly spray the air fryer basket with cooking spray or brush it with oil to prevent sticking.
