- Heat the Oil: In a large pan, heat the peanut or vegetable oil over medium heat. Ensure it reaches frying temperature but does not boil.
- Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, garlic powder, paprika, salt, and pepper. Stir well to evenly distribute the spices.
- Prepare the Batter: Add the two large eggs to the flour mixture and beat thoroughly until a batter forms.
- Add Beer or Soda: Gradually stir in the 4 ounces of light beer or fizzy soda into the batter until smooth and well combined.
- Coat Jalapeño Rings: Dip the sliced jalapeño rings into the batter, ensuring each piece is fully coated.
- Fry Jalapeño Caps: Carefully fry the battered jalapeño slices in the heated oil in batches. Fry each batch for about 5 to 6 minutes, turning occasionally until the batter is golden brown and crispy.
- Drain and Season: Remove the fried jalapeño caps with a slotted spoon and drain on paper towels. While hot, lightly salt them to taste. Serve immediately for best crispness.
