Instructions
- Prepare the filling: Finely chop the cabbage, shiitake mushrooms, and green onions. In a medium bowl, combine the chopped cabbage, grated carrots, mushrooms, green onions, minced garlic, grated ginger, soy sauce or tamari, sesame oil, and black pepper. Mix thoroughly to create a well-seasoned filling.
- Soften the rice paper wrappers: Dip one rice paper wrapper into warm water for about 5 seconds until it becomes soft and pliable. Carefully lay it flat on a clean surface to prepare for filling.
- Assemble the dumplings: Place about 1 to 2 tablespoons of the vegetable filling in the center of the softened rice paper. Fold the sides over the filling, then roll it tightly into a dumpling shape, securing the filling inside. Repeat this process with the remaining wrappers and filling until all dumplings are assembled.
- Heat the oil: Pour about 1/4 inch of vegetable oil into a large skillet and heat it over medium heat until hot but not smoking.
- Fry the dumplings: Carefully place the dumplings in the hot oil in batches, frying each side for 2 to 3 minutes until they are golden brown and crispy. Use tongs to turn them gently to ensure even frying.
- Drain and serve: Remove the fried dumplings from the oil and place them on a paper towel-lined plate to drain any excess oil. Serve the crispy dumplings warm with your preferred dipping sauce such as soy sauce, sweet chili, or hoisin sauce.
