Ingredients
Scale
Potatoes
- 2 lbs Yukon Gold potatoes
Seasonings and Oils
- 4 cloves garlic, minced
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 2 tbsp fresh parsley or rosemary, chopped
- Salt and pepper to taste
Instructions
- Prepare the potatoes: Wash and scrub the Yukon Gold potatoes thoroughly, leaving the skins on to add texture and nutrients.
- Boil the potatoes: Place the potatoes in a large pot of salted water and boil until fork-tender, about 15 to 20 minutes.
- Smash the potatoes: Drain the cooked potatoes and return them to the pot. Using a potato masher or fork, gently press each potato to slightly flatten it without breaking it apart completely.
- Add butter, oil, and seasonings: Drizzle the melted butter and olive oil over the warm smashed potatoes. Mix in the minced garlic and chopped fresh herbs. Season with salt and pepper according to your taste.
- Roast the potatoes: Preheat your oven to 425°F (220°C). Arrange the smashed potatoes on a baking sheet lined with parchment paper, ensuring they are spaced out. Roast for 25 to 30 minutes, or until the outsides are golden brown and crispy.
- Serve: Remove from the oven and serve immediately, garnished with extra fresh herbs if desired for added color and flavor.
Notes
- Leaving the skins on adds a nice texture and nutrients but you can peel them if preferred.
- Use fresh herbs like rosemary or parsley to boost the flavor profile.
- Make sure not to over-smash the potatoes to keep some fluffy texture inside.
- This recipe pairs wonderfully with grilled meats or a fresh salad.
- For extra crispiness, you can broil the potatoes for 1-2 minutes at the end of roasting, watching carefully to prevent burning.
