Pasta Salad

  • 8 oz dry small pasta shape (rotini or bowtie)

  • 1 cup fresh basil leaves, chopped

Garlic Breadcrumbs

  • 2 slices sourdough bread (or other bread), toasted
  • 1.5 tbsp olive oil (for toasting and sautéing)
  • 1 tsp garlic powder (optional)


Instructions

  1. Prepare the pasta: Boil a large pot of salted water and add the pasta. Cook according to package directions, usually 8-10 minutes, until al dente. Drain the pasta and rinse briefly under cold water to stop cooking and cool it down.
  2. Make the salad mix: In a large salad bowl, combine the halved cherry tomatoes, minced garlic, finely chopped shallot, mini bocconcini, olive oil, red wine vinegar, chopped basil, salt, and pepper. Toss gently and let it sit for about 5 minutes to allow flavors to meld.
  3. Prepare the garlic breadcrumbs: Toast the bread slices in a toaster until golden brown. Break the toasted bread into smaller pieces and pulse in a food processor until crumbly.
  4. Sauté breadcrumbs: Heat 1.5 tsp olive oil in a skillet over medium-high heat. Add the breadcrumbs and garlic powder if using. Sauté for about 5 minutes, stirring frequently until the breadcrumbs become lightly golden and crunchy.
