Dry Ingredients
- 1 cup chopped almond
- 2 cups rolled oats
- 2 cups crispy rice cereal
- 1 cup shredded coconut
- 1 cup semi-sweet chocolate chips
- 1/2 cup unsweetened cocoa powder
Wet Ingredients
- 1/2 cup coconut oil (melted)
- 1/3 cup maple syrup
- 1/2 cup almond butter
- 1 teaspoon vanilla extract
Instructions
- Preparation: Gather all ingredients and measure them accurately before starting. Line an 8×8 inch dish with parchment paper for easy removal later.
- Combine Dry Ingredients: In a large bowl, mix together the chopped almond, rolled oats, crispy rice cereal, shredded coconut, semi-sweet chocolate chips, and unsweetened cocoa powder. Stir well and set aside to allow the flavors to meld.
- Mix Wet Ingredients: In a medium-sized bowl, whisk together the maple syrup, melted coconut oil, almond butter, and vanilla extract until the mixture is smooth and creamy.
- Combine Wet and Dry: Pour the wet mixture into the dry ingredients. Using a spatula, gently mix until all the dry ingredients are evenly coated and fully incorporated.
- Press into Pan: Scoop the combined mixture into the prepared 8×8 inch dish. Use the spatula to spread it out evenly and firmly pack it down to ensure the bars hold together.
- Compress Mixture: Place a piece of parchment paper over the top of the mixture and press down firmly to compact it tightly, which helps the bars set firmly.
- Freeze: Place the dish in the freezer for about 2 hours to allow the granola bars to firm up completely.
- Cut and Serve: Once set, remove from the freezer and lift out the block using the parchment paper. Cut into 9 equal squares or adjust to make 10 to 12 bars, depending on your preferred size.
- Storage: Enjoy fresh immediately or store the bars in an airtight container in the refrigerator or freezer for convenient snacking anytime.
Notes
- For softer bars, adjust freezing time accordingly.
- Feel free to substitute almond butter with peanut butter or another nut butter of choice.
- Maple syrup can be replaced with honey or agave for different sweetness options.
- If you prefer nut-free, replace almonds with seeds such as sunflower or pumpkin seeds.
- Store bars in the fridge for up to one week or freeze for longer storage.
