Instructions
- Prepare the Eggs: Place eggs in a pot of cold water and bring to a boil. Once boiling, cover the pot and remove from heat; let the eggs sit for 9 minutes to cook through. Transfer the eggs to an ice bath to cool, then peel and set aside.
- Crisp the Bacon: Warm a skillet over medium heat and cook the double-smoked bacon slices until crispy and browned. Remove the bacon and place on paper towels to drain excess grease.
- Make the Yolk Mixture: Slice the cooled eggs in half lengthwise and gently remove the yolks into a mixing bowl. Add mayonnaise, capers, chopped fresh dill, chives, and grainy mustard to the yolks. Mash everything together until smooth and creamy.
