Description

This Doritos Taco Salad is a quick and delicious Tex-Mex inspired dish that combines seasoned ground beef, fresh romaine lettuce, black beans, tomatoes, cheddar cheese, and crunchy nacho cheese Doritos, all tossed in your favorite salad dressing. Perfect for a family meal or a casual get-together, it delivers bold flavors with a satisfying crunch.

Meat and Seasoning

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning

Vegetables and Beans

  • 3 to 4 Romaine lettuce hearts, rinsed then chopped
  • 1 cup black beans, rinsed
  • 1 large tomato, chopped or sliced cherry tomatoes

Dairy and Chips

  • 1/2 cup shredded cheddar cheese
  • 1 ½ cups nacho cheese Doritos, broken into bite-size pieces

Dressing and Garnish

  • 1 cup Catalina dressing (or your favorite salad dressing; ranch dressing works well too)
  • Fresh cilantro (optional)


Instructions

  1. Brown the beef: In a large skillet over medium-high heat, brown and crumble the ground beef until fully cooked. Drain off any excess grease.
  2. Season the beef: Add the taco seasoning and the amount of water specified on the seasoning packet to the skillet. Stir the mixture and bring it to a boil. Once boiling, reduce the heat to low and simmer for 10 minutes, allowing the flavors to meld. Remove from heat and let the meat cool slightly.
  3. Prepare the salad base: In a large salad bowl, combine the chopped romaine lettuce, rinsed black beans, chopped tomatoes, and shredded cheddar cheese. Add the slightly cooled seasoned ground beef and gently toss everything together until well mixed.
  4. Serve or chill: You can serve the salad immediately, or refrigerate it until you’re ready to eat. Avoid adding the Doritos chips at this stage to prevent sogginess.
  5. Add chips and dressing before serving: When ready to serve, add the broken Doritos chips and drizzle the Catalina or your preferred dressing over the salad. Toss gently to coat all ingredients evenly. Garnish with fresh cilantro if desired, then serve promptly for maximum crunch.

Notes

  • To keep the Doritos crunchy, add them only just before serving.
  • For a vegetarian version, substitute the ground beef with seasoned cooked lentils or plant-based meat alternatives.
  • If Catalina dressing isn’t available, ranch or salsa dressing are excellent alternatives.
  • To reduce calories, use low-fat cheese and lean ground beef or substitute with ground turkey.
