Instructions

  1. Combine Ingredients: In a large saucepan, pour in the orange juice, sugar, and fruit pectin. Stir thoroughly until the pectin is completely dissolved, ensuring a smooth mixture ready for cooking.
  2. Boil the Mixture: Place the saucepan over medium-high heat and bring the mixture to a boil. Stir constantly to prevent sticking or burning at the bottom of the pan.
  3. Cook Briefly at Boil: Once a rolling boil is reached, maintain the boil for about 1 to 2 minutes, which activates the pectin and helps the jelly set properly.
  4. Add Flavorings: Remove from heat momentarily and stir in the vanilla extract. If using, also add the lemon juice and citric acid to enhance the citrus tang and depth of flavor.
  5. Test Jelly Set: Place a spoonful of jelly on a cold plate and let it cool for a minute. Run your finger through it to check for wrinkles and firmness, confirming the jelly is ready.
  6. Jar the Jelly: Carefully pour the hot jelly into sterilized half-pint jars, leaving approximately 1/4 inch of headspace. Seal jars immediately with lids to preserve freshness.
