Description

This festive Easter Jell-O Pie is a colorful and refreshing dessert perfect for spring gatherings. Layers of flavored Jell-O gelatin are combined with whipped cream to create a light, creamy filling atop a crunchy graham cracker crust. Fresh strawberries and blueberries add a burst of natural sweetness and vibrant color, making this pie as visually appealing as it is delicious.

Ingredients

Scale

Crust

  • 2 cups crushed graham crackers
  • 1/2 cup melted butter

Filling

  • 2 packages Jell-O gelatin (various flavors)
  • 1 cup boiling water
  • 2 cups whipped cream
  • 1 tablespoon lemon juice

Toppings

  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Prepare the Crust: Mix the crushed graham crackers with melted butter until well combined. Press the mixture firmly into the bottom of a pie dish to form an even crust layer.
  2. Dissolve the Gelatin: In a bowl, dissolve two packages of Jell-O gelatin in one cup of boiling water, stirring until fully dissolved and smooth.
  3. Combine Filling: Allow the gelatin mixture to cool slightly to avoid melting the whipped cream. Gently fold in two cups of whipped cream and one tablespoon of lemon juice to create a light, fluffy filling.
  4. Layer the Pie: Pour half of the gelatin and whipped cream mixture over the prepared crust in the pie dish. Refrigerate for 30 minutes to allow this layer to partially set. Then add additional layers with different Jell-O flavors and fold in fresh fruit like sliced strawberries and blueberries between layers for a colorful effect.
  5. Chill to Set: Refrigerate the pie for at least four hours or preferably overnight to ensure it is fully set and chilled before serving.

Notes

  • Use different Jell-O flavors for layered color variety.
  • Ensure the gelatin mixture is not too hot when folding in whipped cream to prevent it from melting.
  • Fresh fruit can be adjusted or substituted based on seasonal availability.
  • For a firmer crust, chill the crust before adding the filling.
  • Serve cold for best texture and taste.
