- 11 cups mini marshmallows (about two 10-ounce bags)
- 1 tsp vanilla extract
- 9 cups crispy rice cereal
Toppings
- Sprinkles, for decoration
- Peeps marshmallow chicks
Instructions
- Combine Butter and Marshmallows: In a large microwave-safe bowl, melt the butter and mini marshmallows together by microwaving on HIGH for 3 minutes. Stir after 2 minutes, then continue stirring until the mixture is completely smooth and melted.
- Add Vanilla: Stir in the teaspoon of vanilla extract thoroughly to combine with the melted marshmallow mixture.
- Mix in Cereal: Pour in the crispy rice cereal and stir until all the cereal is evenly coated with the marshmallow mixture, ensuring a sticky, consistent texture.
- Press into Pan: Using a spatula or wooden spoon lightly buttered, press the coated cereal mixture evenly into a 13×9 inch pan that has been coated with cooking spray for easy removal.
- Decorate While Warm: Quickly sprinkle with colorful sprinkles and arrange Peeps marshmallow chicks spaced a few inches apart on top of the warm treats, deciding the approximate serving size based on Peeps placement.
- Cool and Serve: Allow the treats to cool completely at room temperature to set properly before cutting into squares and serving.
Notes
- Use a buttered spatula to prevent sticking when pressing the mixture into the pan.
- Do not overcook the marshmallows in the microwave to avoid scorching.
- For easier cutting, allow treats to cool fully and set well.
- Store leftovers in an airtight container at room temperature for up to 3 days.
