- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped green onions

- 12 butter or romaine lettuce leaves
- Optional: sliced cucumbers

Instructions
- Cook the chicken: Heat the vegetable oil in a large skillet over medium heat. Add the ground chicken, breaking it into small pieces as it cooks until it is no longer pink, about 5 to 7 minutes.
- Sauté aromatics: Stir in the minced garlic and shallot and cook for 2 to 3 minutes until they soften and become fragrant.
- Add flavorings: Mix in the toasted rice powder or cooked jasmine rice, fish sauce, lime juice, sugar, and chili flakes. Toss well and cook for an additional 1 to 2 minutes to allow the flavors to meld and the mixture to warm through.
- Finish with herbs: Remove the skillet from heat and stir in the chopped fresh cilantro, mint, and green onions. Taste the mixture and adjust seasoning by adding more lime juice or fish sauce if needed.
- Assemble wraps: Spoon the chicken mixture into the prepared lettuce leaves, and serve immediately with optional sliced cucumbers and lime wedges on the side for extra freshness and tartness.
